It’s not very often that I find meals I keep thinking about, but this pop-up dinner by SAGRA Food and Wine in La Crosse is one of them. Each Sunday, chef Mitchel cooks up a delicious Italian-inspired tasting menu featuring farm fresh ingredients from @owlbluff ! 😍
Sourcing Local Ingredients
To me, good food is more than just techniques, it’s a lot about the ingredients. Most commercially raised/farmed ingredients taste really bland and that’s where most restaurants source their ingredients in the US. I get it, it’s convenient and cost efficient, they’re running a business after all.
Chef Mitchel at Sagra sourced his ingredients from local farmers, and allows each ingredient to shine without overpowering these ingredients with seasoning. This is why I loved Sagra.
Ever had house-made salami? Yes, chef Mitchel even made the salami himself with pork from @hiddenstreamfarm. Each dish was a full sensory experience, filled with flavor, little surprises and attention to detail.
Im still dreaming about the stone fruit radicchio salad with almond butter and honey. 🤤 The suppli al telefono is another dish that kept me thinking- freeze dried ramp powder was such a special touch!
