Dan Bing with Cheese and Ham (Taiwanese Pancake with Egg) | 火腿蛋餅
Dan bing is a popular and fast breakfast item in Taiwan. It resembles a thin tortilla with eggs and your choice of filling wrapped up in one. There are two main kinds of dan bing, one's made with a pancake like mixture and the other with dough. This recipe is the latter- it provides a chewier and crispy texture if fried till golden. I'm making this with part whole wheat flour, but you can make it with just all purpose flour.

Ingredients
Dan Bing Skin
1CWater
1Call-purpose flour
1/2CWhole Wheat Flour
1/4tspSalt
1/2TBspOil
Dan Bing Filling
1LargeEggBeaten
1SprigSpring OnionChopped
1 SliceCheeseBreak into small pieces
Ham or baconcooked
Sauce
Thick Soy Saucefor dipping
Instructions
Making Dan Bing Skins
In a mixing bowl, mix 1C All Purpose Flour, 1/2C Whole Wheat flour, 1/4 tsp salt, 1/2 TBsp Oil with a fork.
Bring 1C water to a boil.
Once the water is boiling, pour into the mixing bowl of flour and mix with the fork until a lose dough starts to form and the dough isn't burning hot.
Work the flour mixture into a soft dough and cut into 6 even pieces.
Sprinkle flour on a flat surface and take a piece of dough, roll into a 9" circle, roughly 2mm thick.
Grill in a non-stick pan on medium heat until lightly golden on both side, remove from heat and repeat until all 6 pieces are done.
Stack and freeze for later use or follow the next steps to make a dan bing!
Making Dan Bing
Heat 1/2TBsp Oil in a pan or wok.
Beat 1 egg with chopped spring onions and add to the heated pan.
While the egg hasn't set yet, layer one piece of dan bing skin over the egg and pat down with the spatula so the egg stick to the skin.
Cook until the egg is cooked through roughly 1 minute on medium heat. Flip the dan bing over.
Layer cheese first (so it will melt), then ham on top of the egg and roll the dan bing up.
Remove from heat to a plate and cut into pieces. Serve with thick soy sauce.
