No Oven Beef Enchiladas Verde

This fast and super easy enchiladas (if you have your Salsa Verde ready) is super tasty and great for dinner. It is so simple but it tastes so good.

When I was trying to look for references for the enchiladas, all the recipes I came across require baking my enchiladas with tons of cheese.

According to Pedro, real enchiladas doesn’t go into the oven and doesn’t have cheese all over them. Tortillas are cooked in the sauce for a few minutes to soak up the flavor then topped with your choice of meat(or veg) then rolled up and served with a bit of crumbled cheese.

I tried to keep the beef filling super simple since I wanted the salsa verde to shine through, so the ground beef is cooked with onions and peppers then seasoned only with salt.

Beef Enchiladas Verde

This fast and super easy enchiladas (if you have your Salsa Verde ready) is super tasty and great for dinner. It is so simple but it tastes so good.

Ingredients

  • 12 Corn tortillas
  • 1 Jar of Salsa Verde
  • 1 lb Ground Beef
  • 1/2 Onion, diced
  • 1 Green pepper, diced
  • Salt to taste
  • Cheese (Optional)

 

Directions

  1. Heat up 1T oil and stir in diced onions until translucent and slightly browned
  2. Add ground beef and diced green pepper, stir until beef is cooked, season with salt then remove from heat
  3. In a pan, heat up salsa verde
  4. Place corn tortilla into salsa verde, one at the time
  5. Cook the corn tortilla for about 10 seconds on each side so they absorb the flavor but doesn’t fall apart
  6. Remove corn tortilla from the sauce, add your beef fillings and roll
  7. Repeat process till you run out of ingredients
  8. Top with extra salsa verde, cheese and serve!
