These Japanese Curry Tofu Dumplings are a Taiwanese-Japanese fusion twist on a comfort classic. They’re creamy, aromatic, and packed with plant-based protein—perfect for an easy weeknight meal or weekend dumpling party.

Ingredients
1 TBsp Oil
1 C Onion, finely chopped
1/2 Box Vermont Curry Cubes
1Box Minn Tofu, Extra Firm
2C Yukon Gold, shredded
1C Zucchini, shredded
1C SnoPac Organic Mixed Vegetables
1TBsp Soy Sauce
Instructions
● Drain the water from the box of tofu, crumble the tofu into a mixing bowl, add the rest of the vegetables and 1 TBsp of soy sauce.
● In a pan, heat up 1TBsp of oil on medium heat, add the onion and the curry cubes, stir fry until the cubes have melted.
● Add the onion curry mixture to the tofu and vegetables. Mix well and your filling is ready!

Replace tofu with 1lb raw ground beef or pork if you’re looking for something meaty.
